Serves 6 with leftovers
Preheat oven to 400 deg. F
Grease a 9 inch x 13 inch glass baking dish.
1 1/2 cups All purpose flour
1/2 teaspoon Kosher salt (Diamond Crystal)
1 cup Sugar
3/4 cup Unsalted butter, chilled and diced. (1/2 inch cubes)
8 Apples, peeled and cored (we prefer combinations such as Granny Smith with Royal Gala or Macintosh)
1/4 cup Apple cider or juice
1 Tablespoon Lemon juice
1/3 cup Sugar
1/2 teaspoon Cinnamon
TO PREPARE TOPPING:
1. Place flour, salt, sugar and diced butter into the bowl of a food processor. Pulse 15 times at one second intervals to combine. Topping will resemble fine cornmeal. Reserve.
TO PREPARE FILLING:
1. In a large bowl, toss apples, cider, lemon juice, sugar and cinnamon. Pour apple mixture into the prepared glass baking dish and distribute reserved topping evenly over the top.
2. Place into the preheated oven on the middle rack and bake for one hour. Apple daddy will be light golden on the top and a little bubbly around the edges. Let rest one hour before serving. Serve with brown sugar cinnamon ice cream.
Using a combination of apple varieties gives the dish a mixture of textures and levels of sweetness.
